Which olive varieties do you use?
Our olive oil is produced from select local olive varieties native to the Hatay region, including Halhalı, Savrani, Sarı Haşabi, Sarı Ulak, Karamani and Gemlik. Thanks to the region's climate and soil structure, these olives offer a superior aroma and quality profile.
How and when are the olives harvested?
Our olives are harvested in the Hatay region generally from mid-October to the end of December. Early-harvest olives are picked in October and November before full ripening, resulting in lower acidity, higher polyphenol content and an intense fruity aroma. Harvesting is done both by hand and with mechanical shaker machines. Harvested olives are processed on the same day to preserve freshness and quality.
How soon after harvest are the olives pressed?
Olives are pressed using modern systems within 4-8 hours at the latest after harvesting. This rapid processing preserves the product's freshness and nutritional value.
Do you use the cold-press method?
Yes. Our olive oils are produced using the cold-press method (below 27°C). This method preserves phenolic compounds and natural aromas.
What is the polyphenol content?
The polyphenol content of our olive oils averages between 250-500 mg/kg. High polyphenol levels are beneficial for health and also extend the oil's shelf life.
Filtered or unfiltered?
Both options are available. Unfiltered: more intense fruity aroma, shorter shelf life. Filtered: clearer appearance, longer shelf life.
Do you provide laboratory analysis reports?
Yes. We share analysis reports covering acidity, peroxide value, K232, K270, polyphenols and other quality parameters for all our production batches with our customers.
