The Olive's Journey
The journey of olive oil to your table runs uninterrupted for 12 months, from January to December.
January
Winter pruning and soil cultivation. The trees are in their dormant period.
February
Fertilisation begins. Irrigation infrastructure is inspected.
March
Buds form on the trees; sapling planting takes place.
April
Weed control and grafting are carried out.
May
Trees begin to flower.
June
Fruit set begins.
July
Irrigation and fertilisation continue.
August
Olives continue to grow; quality monitoring is ongoing.
September
Early harvest preparations begin; equipment is readied.
October
Early harvest starts; high-quality oil is obtained by cold pressing.
November
Main harvest season. Olives are picked at optimum ripeness.
December
Late harvest and winter care. The extracted oil rests in tanks.
